Covered Rice Pie

This is a Peruvian dish known as arroz tapado.  It is basically rice on the bottom, rice on top and a ground beef mixture in the middle.   In Peru, it is always served with hard boiled egg on top, though this isn’t really necessary for those that do not like it.  This is a great meal for winter time.  It fills you right up, and is one of those homey, feel good meals.  yuummmmmmmmmmm.

Raspberry Bavarian Cream

After watching Julie and Julia (the Julia child movie), I had a big craving to try the raspberry bavarian cream dessert they mention.   So, I searched for the recipe, and made this dessert.  It turned out excellent.  Not only does it look delicious, it was delicious.  It is very similar to a raspberry mousse, expecially in texture.  It is vey rich and creamy though.

Eggy Lemon Cake

The reason I call this eggy lemon cake is because I accidentally put in 3 eggs, when it was supposed to b 1.5 (was making a half recipe). The result showed my what happens if you put in too much egg when baking – it gives the food an eggy taste and flavor. Not really something I’d recommend. It wasn’t horrible, but could have been much better.

I later made this cake again (although with oranges and orange juice) with the right amount of egg, and it was delicious. Had a great, cottonlike texture, light and fluffy, and with a nice orange glaze on top.

Baked Bechamel Fusili

Well, we had some delicious left over bechamel sauce, and instead of letting it go to waster, I decided to turn it into a pasta sauce.   Basically, it was the bechamel, plus some corn, mini broccoli florets, chicken, and some herbs.  That was then added to cooked fusili, which was then baked with cheese.  It turned out phenomenal, I will definitely be doing this again!   It was worth making bechamel just for this pasta.

Chicken Brocolli Crepes with Bechamel Sauce

We had some leftover crepes from a recent breakfast, so we saved them to make a dinner the following night. I was thinking cream sauce, but decided on something a little lighter, a bechamel sauce. This was a great pairing over the crepes, which were filled with chicken, brocolli, cheese, and fresh spices.
